Egg-ceptionally yummy and healthy

I ran out of ideas of what to cook for dinner last night. So I gathered what I have in the fridge. Four eggs, spinach, a tomato, mushrooms, and minced meat.

Chopped the tomato, mushrooms and spinach to tiny pieces, marinated the minced pork with soy sauce and a pinch of raw sugar. Beat up the eggs with a dash of milk, and threw everything in.

Result? A yummylicious fluffy omelette which Aidan enjoyed with Vegemite soup. And oh, steamed fish as well.

Now tonight I have roo steak and garlic bread, boiled brussel sprouts for the big boy, and perhaps fried rice with sausages for the little one.

Men! Why can't you fix your own dinners?! Go get some pizza or something. For those ladies who have hubbies who love to cook, good on ya. Never in a million years mine will serve me breakfast in bed.

My hub can cook but he is lazy. He mastered his cooking during his uni study over at Brisbane :)

I haven't really tasted a good meal from him so far... LOL :)
